(Complete Recipe) Preserved Calamansi Juice With Sour Plum

Homemade preserved calamansi juice with sour plum
Ingredients :
50nos Calamansi Limes (Limau Kasturi)
2tbsp small rock Sugar
2tbsp Brown Sugar
2tbsp Castor Sugar
(Mixed all the sugars together in a bowl)
50nos salted sour plum
1 Air tight Glass Jar (cleaned & dry)

1. Wash & clean the limes, use a clean towel to wipe dry each & every limes.
2. Make a small cut at the middle of the lime & squeeze out the juice into a separate bowl, discard the seeds. Then stuffed the all salted sour plums into the the limes.
3. Arrange the stuffed lime layer by layer, 1 layer of stuffed lime, 1 layer of mixed sugar, repeat until done.
4. Lastly pour in the calamansi juice and locked the jar cover tight.
5. During fermentation process, keep the jar in room temperature area and away from direct sunlight.
6. Ferment at least 3weeks before use and on daily basis, lightly tilt the jar to keep the top layer wet at all times as to prevent the surface which is not soaked getting moldy.
