Kuih Dadar
Coconut Filling:
250g grated coconut (white part only)
100g chopped gula melaka
70ml water
2pce knotted Pandan leaves
1/2tsp salt
Method:
1. Mix water with chopped gula melaka, knotted pandan leaves,salt in a saucepan, bring to boil until sugar melted.
2. Discard pandan leaves, add grated coconut. Stir fry until slightly dry n well combined. Set aside.
Crepe Batter:
300g all purpose flour
1tbsp tapioca flour
550ml pandan water
100ml coconut milk or fresh milk
2 egg, lightly beaten
1/4 tsp salt
Method:
1. Mix flour n salt in a mixing bowl. Add Pandan water n coconut milk, mixed well.
2. Add beaten egg into flour mixture n whisk till well combine.
3.Sift the batter n set aside for 30 minutes to 1 hour.
4.Fry thr crepe till all batter is finished. N wrapped it with the coconut filling n roll it up like the spring roll. Done
