(Complete Recipe) Cheese Ogura Cake

Cheese Ogura

unsalted butter 60g (room temp)
Fresh milk 60g (room temp)...
Cream cheese 80g (room temp)
Salt 1/4tsp
Egg yolk 5
Whole egg 1
Low protein flour/super fine flour/ Cake flour 70g

Meringue:
Egg white 5
Caster sugar 80g
Cream of tartar 1/4tsp (Lemon juice 1 tsp)

Method:
1. Double boil cream cheese, unsalted butter and milk and whisk till smooth mixture. Set aside.

2. Whisk egg yolks and whole egg then add cheese mixture.

3. Shift in flour and salt then mix it until smooth and well combined, put aside.

4. Whip egg white until foamy. Add lemon juice(cream of tartar) and half of sugar. Continue beating for few minutes.
Add in balance of sugar. Beat until egg whites till firm peak form.

5. Add 1/3 of meringue into egg yolks mixture and fold in lightly. Add remaining meringue and fold gently to incorporate completely.

6. Pour the mixture into a lined baking tin, 7" square pan.

7. Steambake at 160degrees for 70min.

8. Once baked, remove from the pan immediately, inverted on a rack and let it cool.
