(Complete Recipe) Penang Curry Mee with Curry Chicken

My masterchef mama first try on cooking Penang Curry Mee with Curry Chicken🍜

*Penang Curry Mee*
SOUP BASE INGREDIENTS (10pax servings)
A. Stock ( Boil for 40mins, filter away all the ingredients then you will have a clear soup)
4500ml water (i boil 1kg shrimp shell for stock)
3 whole chicken bones
5 stalks lemongrass
5 pandan leaves (tied to a knot)

B. Soup Spice Paste (Blend finely)
12 shallots
6 cloves garlic
5 dried red chilies (remove seed)
1 tbsp white pepper corns
5 tbsp coriander powder
1pc belacan (2cmX2cm size)

C.
100gm rock sugar (adjust to your preference)
12 whole tofu puffs (each cut into 4pc)
400 ml coconut milk (adjust to your preference)

• Heat up 4tbsp oil, sauté B until fragrant.
• Then add the sautéd spice paste into A - soup stock, bring to boil then add C - coconut milk, rock sugar, tofu puffs and salt to taste. After adding the tofu puffs, cook for a few more minutes until it is soft and remember to keep stirring continuously to prevent the coconut milk from curdling.

*CHILLI PASTE INGREDIENTS* [blend]
8 red chillies
12 dried chillies
20 shallots
8 cloves garlic
4tbsp dried shrimps

* Blend all the ingredients to a fine paste / your preferred texture.
* Heat up 4tbsp oil and sauté the chili paste until aromatic.

*Curry Chicken*

INGREDIENTS A
4 chicken thigh ( i cut 1 chicken thigh into 2pcs)
Optional - snake long beans

INGREDIENTS B (blend)
8 dried chilli
8 fresh red chili
1 tsp coriander seeds
2 candlenuts
5 cloves garlic
15nos shallots
1 slice galangal (ard 3cmX3cm)
1 & 1/2 tsp fennel
1 & 1/2 tsp cumin
3stalks lemon grass (cut into half & smashed)
2tbsp Alagappas chicken curry powder

INGREDIENTS C
200ml thick coconut milk

• Heat up 200ml oil, sauté Ingredients B until fragrant.
• Add in chicken thigh, 500ml water, cover until chicken is cooked.
• Stir in coconut milk, salt & sugar to taste. Bring to boil until it reach the almost thick gravy consistency you want.
