(Complete Recipe) Steamed Tapioca Kueh

A healthy version of steam tapioca kueh with no sugar added.. simply delicious, recipe shared by my friend..
Healthy Steam Tapioca Kueh
Ingredients :
1.5kgs Tapioca (Gross wt)
1tsp Sea salt
150ml Coconut milk
1 Grated cocunut (white parts only)
1 egg (slightly beat)
Method :
1) Peel, wash and cut tapioca into chunks. Steam with high heat for at least 30mins or till very soft. Remove and mashed while its still hot.. (I use stand mixer with flat beater)
2) While beating, add salt, coconut milk, grated coconut & egg mix until well combined..
3) Grease with butter a 10" square/round steaming tray, pour in tapioca mixture and press until very firm and level on top..
4) Steam with high heat for about 30-40mins.. (cover with aluminium foil to prevent from water dripping)
5) Leave to cool completely before cutting..(2 hrs)
