(Complete Recipe) Jelly Blue Pea Longan Cake

The recipe can make one 8inch round cake pan but I made it into one 8inch round cake pan and one 6inch round cake pan. Recipe: Top layer 2 2/3 cups of plain water 1 1/3 cups of longan juice 1/2 cup sugar 3 1/2 tsp agar agar powder 1 can of longan Mix everything except longan into a pan, turn on the heat and stir. Let it boil. Stir occasionally. Pour some mixture into the pan then roughly arrange the longan into the pan and pour in the rest of the mixture. Let it sit for 15-20mins so that the top will set. Second layer: 1 1/2 cup coconut milk 1/2 cup plain water 2 tsp agar agar powder 6 tbsp sugar pinch of salt knotted pandan leaves (optional) Mix everything into a pan and stir. Turn on low heat and bring it just to boil. If boil over high heat or over boiled will have lotsa bubbles like mine. Slowly and gently pour it on top of the top layer. Let it sit 15-20mins so that it will set. Third layer: 2 cup plain water 6 tbsp sugar handful of dried blue pea flower 2 tsp agar agar powder 1/2 lemon juice Mix everything except lemon juice, turn on the heat and let it boil. Stir occasionally. Remove the blue pea flower when you got the colour that you want. then squeeze in lemon juice. Lemon juice will make it turn purple. If you want it blue then don't put in lemon juice. Pour it on the second layer and let it set. Once it set put inside fridge to cool. Only it is completely cooled and set, you can remove it from the pan. Happy trying
