(Basic Recipe) Braised Sea Cucumber With Roasted Pork Bones

Braised sea cucumber with roast pork bone...

Ingredients
1. Roast pork bone (tell the butcher it is for braising sea cucumber and mushrooms - he will know the best part to cut for you) * you can also use meat ribs or meat belly but need to marinate them in advance
2. Ready to cook Sea cucumber (cut according to your preference)
3. Sesame oil to sauté the ingredients.
4. 6-7 big cloves of garlic
5. 6-7 slices of Bentong ginger
6. 8-10 Dried Mushrooms (soak in water until soften and cut into half. Then place in a container, add in enough water and keep covered in the fridge, leave it overnight - this enhances the texture of the mushrooms- keep the soaked water for braising)
7. 8-10 big dried oysters (soak for 10-15 minutes- keep the water for braising)
8. 1 piece of Dried cuttlefish (clean,soak and cut into strips-optional but it really enhances the flavour)
9. Chicken broth or water for braising
10. Cornflour and water mixture to thicken the gravy
11. Seasonings of your preference like soya sauce, oyster sauce, sea salt, pepper, brown sugar and dark caramel sauce (check the taste firsr before you add in the seasonings!)

Steps
1. Heat up the wok with sesame oil. Sauté ginger and garlic followed by dried cuttlefish strips, dried mushrooms and dried oysters. Then add in black fungus and finally sea cucumber and continue to stir fry. Add in soya sauce, oyster sauce, pepper and dark sauce. Sauté for a while. Add in the mushroom and dried oyster water and bring to a boil.
2. In a pot, line the roast pork bone at the bottom and transfer the ingredients from the wok to the pot. Add in chicken broth or water and bring to a boil for 10 minutes or so
3. Simmer on low fire and checking from time to time to ensure there is enough water or stock for braising and watch out for the sea cucumber. Once it reaches your preferred texture, check the seasonings and thicken the liquid with cornflour mixture.
4. Let the dish stand in the pot for an hour or so for the flavour to develop.
