(Basic Recipe) Vegetarian Glass Noodles

Recipe learnt from my late maternal grandma - although yummy, somehow it tastes different from hers ..

Vegetarian glass noodles

Ingredients
1. Garlic ( minced but can omit)
2. Half bottle of nam yue (mash the cubes with the nam yue liquid)
3. Glass noodles (pre-soaked and drained)
4. Black fungus and mushrooms (pre-soaked and drained and cut into strips)
5. Tofu puffs , gluten puffs and fried fucuk or known as beancurd sheet (soak and squeeze out the water)
6. Nape cabbage ( wash and cut)
7. Optional - dried lily flowers, bamboo fungus and enoki mushrooms

Steps:
1. Sauté minced garlic, followed by mushrooms, black fungus, tofu puffs and fried fucuk (beancurd sheet)

2. Stir in the nam yue mixture and mix well.

3. Sauté for a while and add water enough to cover all the ingredients.

4. Bring to a boil and simmer until they soften.

5. Add in nape cabbage while the pot is simmering away

6. Check the taste and can add more nam yue if you feel it is not enough.

7. Add in the gluten puffs, bamboo fungus and enoki mushrooms.

8. Let them simmer for a while longer before adding in the glass noodles. Give it a good stir to mix well with other ingredients and off the flame.

9. Let it stand in the pot.

10.After 15 minutes or so, just give it another quick stir. By now the glass noodles would have soaked in most of the nam yue gravy.
