BUBBLE RICE CRACKER
•Ingredients•
(A)
Oil - 1/2 Tbsp
Water - 650gm
Sugar - 250gm
Maltose - 1/2 Tbsp
Lime Juice - 3/4 Tbsp
(B)
Bubble Rice - 250gm
Peanut - 250gm } pre fry with empty
Sesame - 130gm } wok (I use store bought chunk peanut)
•Method•
1) Boil ingredients (A) till thicken .. (approx 20-25mins depend on your stove flame)
2) Off flame, add in (B) mix well until all coated with caramel ..
3) Pour into 14"×14"×1" tray .. (I use 15"×13"×1")
4) Use rolling pin to press it while it's still warm, once cool it will get harden and will crack .. has to be FHFL at this stage ..
5) Turn upside down on a piece of parchment paper and cut into your desire size ..
Note : With this amount of ingredients above I can make 8-9 packs or 3 standard red cover container ..
