Dried Fish & Peanut Porridge (柴鱼花生粥)
Ingredients: (serves 4)
2 cup Rice
1 tsp Salt
1 tbsp Cooking Oil
1 pot Chicken Stock
1 pc Dried Fish 柴鱼 (soak, shred)
2-3 pcs Dried Scallop (soak, shred) (optional)
150g Raw Peanut (soak overnight)
2pc Ginger Slice
Preparation for smooth porridge:

1 tbsp Cooking Oil

1 pc Dried Fish 柴鱼 (soak, shred)
2-3 pcs Dried Scallop (soak, shred) (optional)
150g Raw Peanut (soak overnight)
2pc Ginger Slice
Preparation for smooth porridge:
Wash Rice, Drain, Mix it with 1 tbsp Oil and 1 tsp Salt and marinate for 30 mins.
Boil chicken stock at high heat.
When stock boils, add in rice & cook over high heat for 10 mins.
Add in 柴鱼, peanut & ginger.
Reduce heat to simmer for 45 mins to an hour or until rice softens and smooth.
(remember to stir constantly, to prevent burnt at the base)
Topped with spring onion, sesame oil and pepper.
Serve Hot!!
