INGREDIENTS :-
• 20-30 kadok leaves
• Dash of pepper
• 2 eggs
• 6 kaffir lime leaves, sliced finely
• 125 ml coconut milk
• Sugar & salt to taste
• Banana leaves 7 cm x 15 cm pieces
• 300g Mackerel Fish / White fish fillets...(Add a pinch of salt Pound or blend together with spice paste till fish meat becomes fine fish paste. Add half a tsp finely cut kaffir lime leaves (alternative 1 tsp lemon zest)
Mix well set aside.

Spice paste (ground)
• 1 Tbsp tapioca flour or Rice flour
•4-5 fresh red chillies , discard seeds
•8-10 shallots
•2 Onions
•3 pip garlic
•2 stalks lemon grass finely cut
•6-8 dried red chillies, soaked and drained
•1 inch piece of fresh turmeric(alternative 1 tsp powder turmeric)
•4 candlenut
•1 tsp roasted belacan(shrimp paste)
•1 inch piece of fresh galangal (alternative 1 tsp dried powder galangal)
Blend all together into a fine paste.

Mix into the fish paste, and add in coconut milk, eggs and a little salt & sugar to taste.
INSTRUCTIONS :-
Place 3-4 kadok leaves in the centre of a banana leaf. Take 2-3 tbsp full of the ready mixed fish paste, flatten the fish paste. Fold to close it inside the banana leaf. Seal with the skewers on both ends. Grill it, each side 3 mins (total time approximately 5 mins.).
Serve with rice or bread.
