Recipe for gluten free swiss roll - credit to Pamela Liu
Mixture 1: 5 egg Yolks, 20g sugar, 1tsp vanilla essence, 55g Rice flour, 35g corn flour, 35g corn oil and 20g water (I used milk) Beat to pale yellow.
Mixture 2: 5 egg whites, 70g sugar and 1/2 tsp cream of tartar. Beat to soft peaks.
Mix both and bake at preheated oven at 190C for 20 minutes.
Filings is about 50g butter and 50g sugar beaten to nearly white. Or use any jam or kaya.
