Making the loaf for Klaus who is 7mths and 25days.. so I'm using breastmilk.. just substitute with water or whole milk if not using breastmilk...
This recipe is actually a charcoal bread recipe but I don't have bamboo charcoal in my pantry to I added black sesame. You may omit it.
Recipe adapted from Alex Goh The Art of Making Bread Craft Seris 1011.
Here's my adaption:
Sponge Dough
100gm organic hi protein wholemeal flour
5gm sugar
1/4tsp instant yeast
60ml cold breastmilk
Mix all together and knead into a dough. Cover it and let it ferment at room temperature for 1 hour, before keeping it in the fridge for 12-16hours.
Main Dough
Dry ingredients:
150gm organic hi protein wholemeal flour
50gm organic wholemeal flour
6gm black sesame powder (optional)
4gm instant yeast
20gm sugar
3gm salt
Wet ingredients
30gm cold eggs
100gm cold water
30gm softened unsalted butter
Put wet ingredients, dry ingredients and sponge dough into a stand mixer, start on min and increase to speed 1. Let it mix into a rough dough, then add softened butter and mix for 20mins or till dough is elastic (about 27-29c).
Then let cover it and let it ferment for 30mins then flatten the dough with a rolling pin and roll it up like a swiss roll. Put into a Pullman tin and cover it with cling wrap. Let it rise till almost 90% full. Remove the cling wrap and cover with Pullman tin cover. Total about 1hour.
Bake in preheated 180c fan force oven for 30mins. Once done, remove immediately from the pan and let it cool completely before slicing.
This can be hand kneaded or use breadmaker...
