Recipe adapted from www.ahealthysliceoflife.com
1 cup cooked quinoa (I'm using tri colour quinoa)
1/2 cup grated zucchini (can be green or yellow)
1/2 cup grated carrot
1/2 cup bega tasty cheddar block cheese (650mg/100gm serving in sodium)
A palm size of parsley, finely chopped..
2 size B eggs
1/4 cup all purpose flour...
Mix cooked quinoa with grated zucchini, carrot, cheese, parsley and egg.. then lastly add in all purpose flour and mix well.
Scoop and divide into 8 patties or desired size..
Baked at 180c for 25-30mins. Let it cool down completely before giving to your little ones...
For the extras, just cling wrap it and put into freezer for 1-2hours, then store it in zip lock bag. Pop it into oven whenever you need it..
