Steam Pumpkin Cake
Ingredients:~
3 eggs
180g sugar
1/2 tsp salt
160g pumpkin (steamed & mashed)
200g milk
140g corn oil
300g flour
2 tsp baking powder
1/2 tsp baking soda
100g pumpkin seeds
Method :~
Mix eggs, sugar & salt together till creamy.
Add pumpkin and milk & mix well.
Next add corn oil & mix till its well blended into batter.
Put flour+baking powder+baking soda bit by bit (maybe in 3~4 batches) and again mix well.
Pour into greased & lined mould.
Steam for 60min
Tips :
1) wrap a cloth on the lid of wok / pot / pan, this to prevent the steam water from dripping on the cake.
2) The cake will rise up so do use a deep wok / pot / pan.
3) Don’t open the lid till its times up.
4) Use a bamboo skewer to poke into the batter to check it 100% cooked. If its clean skewer than its cooked…if not, steam another 10min.
