Soya Bean Longan Jelly
1L Soya Bean Milk
1 packet Pearl Mermaid Agar-agar powder
250g castor sugar
1.5L water
400mL canned evaporated milk
A tin of canned longan or lychee
20 of 150mL plastic cups (I prefer to use glass containers instead of plastic)
Pandan
Method:
Stir agar-agar powder into water until it completely dissolves. Add pandan then pour evaporated milk bring everything to a boil. Slowly pour the soya milk. Stir to make sure everything is melted. Add sugar. Let it simmer for a 3-5 minutes and scoop contents into the containers.
Once the mixture starts to set, place one tbsp of longan juice and the longan on top. Chill in refrigerator.
