(Complete Recipe) Leopard Print Ogura Cupcake

Recipe
(A)
5 egg yolks
1 whole egg
50g corn oil
60g milk
70g cake flour
1/4 tsp salt

(B)
5 egg whites
1/4 tsp cream of tartar
80g castor sugar

For Choco spot
3tbsp batter with 1 tsp Valrhona Choco powder ( you can use any Choco powder) Piping Tip No2
3tbsp batter with 1 tsp charcoal powder. For charcoal batter, I used piping tip No1

Steambake Method used:

4 small bowls of hot water on each oven's corner.
(Did not need much water coz of short baking time)

Method:
(1) Whisk egg yolks, whole egg and corn oil.

(2) Add in milk and whisking.

(3) Fold in sieved cake flour followed by salt. Set aside.

(4) In a clean bowl, beat egg whites until foamy. Then, add in cream of tartar to continue beating.

(5) Add in castor sugar in 3 batches to (4) to beat until you get firm peak meringue.

(6) Fold in meringue lightly to egg yolks mixture/batter in 3 batches until well combined.

(7) Pour the batter in the cupcake liner (almost full cup) then draw the leopard pattern on top. I used small round piping tip no 2 tip for choco, pipe few small spots then draw the black line around Choco spot using charcoal batter.

(8) Steam Baked in preheated oven 100C for 15min then increase to 120C for 10min. (Each oven may vary and it depends on the size of cupcake, too). I just put four small bowls of hot water on each oven corner.

(9) Let it cool on rack.
