Salted Egg Yolks Fried Chicken
8 chicken thigh (small size)
wash and pat dry, marinate with salt and pepper (around 3hours)
Mix and sieve
1/3 cup all-purpose flour
1 teaspoon baking powder

1 tablespoon garlic, minced
1 bird's eye chili, seeded and chopped
20 curry leaves
4 salted egg yolks, mashed
1 teaspoon yellow curry powder
1 teaspoon sugar

Method
Preheat oil in a deep pan over high heat.
Preheat oil in a deep pan over high heat.
Dredge chicken in flour mixture. Deep-fry until golden. Drain on a wire rack.
Heat butter in a pan over medium heat. Sauté garlic, chilies, and curry leaves. Add salted egg yolks, curry powder, and sugar.
Toss the chicken and mix till all coated.
