Ingredients:
200g gula Melaka
200ml water
3pcs Pandan leaves
250g AP flour (All Purpose Flour/ Medium Protein/ Tepung Terigu) I used Superfine Wheat Flour
2 yolks
50g caster sugar
1/2 tsp baking soda
1/4 tsp baking powder
100g corn oil
Boil gula Melaka and water and Pandan leaves just till the sugar dissolves (using low heat). Let it cool (room temperature).
Beat yolks, sugar, BP and BS with high speed till pale. Add in gula Melaka water followed by flour using speed 1 till well mixed. Fold in corn oil (using spatula) till glossy (Pic No.6). Steam for 20min using high heat. Cup No10 can get 8pcs huatkueh. Happy baking and Happy TGIF.
NB: Remember the water must be very hot before you put in your kuih and cover the lid with napkin.
