Vietnamese Lemongrass Skewer With Nuoc Cham Dipping Sauce
400gm minced pork
1 Tbsp pounded ginger
1 1/2 Tbsp pounded shallots
2 Tbsp pounded garlic
1 tsp keffir lime leaves - finely chopped
1/4 tsp pepper
1 Tbsp sugar
2 Tbsp light soy sauce
10 - 12 stalks lemongrass
1) Mix all marinate ingredients together till well combined.
2) Add minced pork. Stir and mix well. Let it marinate for an hour
3) Divide mixture evenly and mould onto the root part of lemongrass
4) BBQ or grill skewers till cooked
Nuoc Cham Dipping Sauce
1 Tbsp sugar
2 Tbsp hot water
2 Tbsp fish sauce
2 - 3 chilly padi, sliced
1 tsp chopped garlic
Juice of 3 limes
1) Mix sugar in hot water till dissolved
2) Add in the rest of ingredients
3) Stir and mix well
