Recipe: ( Shirley's Homemade)
230gm self raising flour
1/4 tsp salt
160 gm castor sugar
140 gm butter
2 eggs
125 ml milk
40 ml concentrated pandan juice
Fillings:
100 gm gula Melaka
5 tbsp water
100 gm grated fresh coconut
Method:
1.cream butter n sugar till light n fluffy.
2.Add in egg 1 by 1
3. Add in flour alternating with milk.Lastly add in pandan juice.
Mix well but do not over mix.
4.scoop batter into paper cups 80% full and bake in pre heated oven at 180°C for 20 - 25 min depending on your oven. Cool the cupcakes.
5.use a fruit scoop or small spoon core the centre of the cake n fill with 1 tsp of coconut filling.
Top with desiccated coconut or cream.
Done.
# Put Gula Melaka n water in a pot .Cook till gula Melaka has dissolved. Add in the fresh coconut n cook till coconut filling is thick n glossy. Cool before using.
