(Complete Recipe) Bengka Ubi - Baked Tapioca

Bengka Ubi

2 nos eggs
250 gram sugar (actual 300)
A pinch of salt
1 kg grated tapioca
200 ml coconut milk
300 ml water
4 pandan leaves

Just mix all the ingredients in a big bowl. Knead n wring pandan leaves in mixture till completely crushed. Discard pandan leaves.

Pour batter into cake tin that hav been greased with butter, smooth the top n put into the preheated oven in 170 for 90 minutes (for my oven) or until the inserted skewer comes out almost clean.For last 10 minutes i just used top heat to hav the golden brown n slightly caramelized in the top.

Remember to leave it on the wire rack till totally cold before cut it.

*actual amount for the coconut milk was 500ml, but I reduced it to 200ml+300ml water to get total 500ml. So my cake can said is less sweet n less coconut milk.
