Braised Pork Belly w Sea Cucumbers
300g pork belly
200g presoaked sea cucumber
4slices old ginger
2pips smoke garlic
1 star anise
10g cinnamon
3 cups water
Chinese wine
Roasted pork
Seasoning
1tbsp oyster sauce
3tbsp soy sauce
2tsp dark soya sauce
Dash of salt to taste

Method
1. Wash and slice pork belly, soak in water by adding 1/2 bowl of extra cooking wine to remove fishy for 10min.

2. Cut presoaked sea cucumber and steam for half an hour, remove and set aside.
3. Heat oil in wok sauté ginger, garlic, cinnamon, star anise till fragrant, add in pork belly. Stir occasionally and mix well. Pour in water and bring to boil, add roasted pork. Turn to low heat and simmer for 1hour.
4. Add in sea cucumber when meat tender. Continue simmer for another half hour.
