Brinjal Sambal 😗
Ingredients :-
300g brinjal (eggplant)
125ml (5tbsp) oil
20g - dried prawns - soaked & cleaned
2 tbsp water
salt & sugar to taste

Method :-
1. Cut the brinjal into 4x2cm pieces and wash clean . Drain in a colander.

2. Heat the oil in a work over a medium frame & fry the brinjal until lighty browned. Drain on paper tower.
3. Add the dried prawns to the oil in the wok & saute until fragrant. Dish out & set aside.
4. Add the sambal belachan to the oil remaining in the wok & saute until aromatic before adding the water, stir & season to taste with sugar & salt.
5. lower the heat & return the fried brinjal & dried prawns to the wok, stir to mix, dish out & serve immediately.
Sambal belachan :-
Ingredients :-
100g (about 8) fresh red chillies
40g belachan, toasted
3 tbsp kasturi lime juice (from 3 limes)
salt & sugar to taste

Method :-
Pound the chili and belachan together to the desired consistency. Add the lime juice , salt & sugar to taste. Can keep the extra in the freezer for the next use.
