(Complete Recipe) Sambal Terung Pipit

Sambal Terung Pipit Recipe:-

Ingredients:
8 terung pipit
1/2 indian red onions ( sliced)
I sprig curry leaves
3 tbsp cooking oil
1 tbsp turmeric powder
1 tsp salt
A handful of anchovies (pounded)

Blend into paste:
-2 handfuls of dry chillies(boiled and deseeded)
-1 bulb garlic
-2 inches long ginger
-2 stalks lemon grass
2 inches long galangal
-3 inches long fresh turmeric
-1 tbsp coriander seeds
-1 tbsp fennel
-1 tst ground black pepper
-1 tsp oil

Garnishing:
I/2 moon red onions

Method:

1) wash terung pipit and slit criss cross at the bottom.

2) Marinade terung pipit with salt and turmeric powder for 5 minutes.

3) Heat wok with oil and fry terung pipit till it turns dark purple and is cooked.

4) Remove terung pipit from from wok and place it on an absorbant cooking tissue to absorb excess oil.

5) Heat up a clean wok with 3 tbsp cooking oil. Add in pounded anchovies..saute till it is half cooked and then add the blended paste.

6) Saute the paste till oil separates. Keep stiring occasionally to prevent it frm burning. Then add in the sliced onions and curry leaves. Continue to saute till onions are soft and fragrant.

7) Add salt to taste.

8)Arrange the fried terung pipit on the serving plate.

9) Off stove and pour the gravy on the terung pipit.

10)Garnish with onions.
