It's all briefly added and mixed.
- minced chicken (amount depending ur preference)
- one to 1 teaspoon light soy sauce (lesser portion if less mince)
- chopped spring onion
- chopped carrot
- garlic (optional)
- any other side ingredients u want to add eg mushrooms, corns (optional and based on preference. I only put carrot and sprig onion as an experiment)
- some oyster sauce
- white pepper
- some crack of ground black pepper
- one to two teaspoon of Chinese Hua tiao shao Xin or just Shoa Xin wine
- 1 teaspoon sesame oil
- very small pinch sugar (optional but if prefer just add to lift up flavour)
- corn flour for coating
Method:
Mix all the above and leave it aside at least 30mins. Put in fridge is better so tht it bind together cos I didn't put egg.
Heat up the wok and oil. Don't have to deep fry it You may shallow fry (oil just enuff to cover half the patty).
Form the patty, Dip/pat the party in corn flour. Remove the excess before put into the hot oil.
Lower the oil to medium so tht the patties don't get burnt.
