Banana Cotton Cake. Plz refer to the video for the cake texture.
Ingredients for the cake:
A
150g banana...
50g caster sugar
1 egg
7 yolks
1/4tsp salt
Ingredients for the cake:

50g melted butter
50g fresh milk

150g cake flour
D
250g egg whites
125g caster sugar

Lemon DCC with 2tbsp butter
DCC
Method:
1. Beat A till ribbon stage
2. Fold in flour
3. Pour B and mix till glossy
4. Beat the meringue
5. Fold 1/3 of the meringue into the batter. Fold well and continue the rest.
6. Pour into mould and bake at preheat oven 160degrees for 35min using steam bake method.
7. Cool the cake in the rack.
8. Double boil one bar of lemon DCC with 2tbsp butter, I'm using lemon Collata and pour on the cake. Let it cool. Decorate with DCC using a brush.
