Original recipe uses dark cocoa powder but i can't find it in the place i'm staying so i substitute with bamboo charcoal powder...
Recipe
Dough
375gm bread flour
35gm sugar
1tsp instant yeast
1/2tsp salt
250gm milk
20gm soften unsalted butter
Chocolate patches
15gm cocoa powder
10gm milk
Bamboo charcoal dough
2gm bamboo charcoal powder
5gm milk
In a big bowl, mix bread flour, sugar and yeast together. Then add salt and milk. Stir to combine then knead into a rough dough. Add soften butter to the dough and continue to knead for 20mins or more.. until the dough is ready. You know it's ready when you stretch the dough to thin layer (it didn't break) and poke a hole (the hole remains the same).
Remove 320gm dough then set it aside to proof for 1hour or double in size.
In the remaining dough, add in cocoa powder and milk. Knead to combine. It will take awhile but eventually it will blended in..
Remove 205gm cocoa dough then set it aside to proof for 1 hour or until double in size.
Add bamboo charcoal powder and milk into the remaining dough and knead till combine. Set it aside to proof for 1 hour or until double in size.
For chocolate dough, divide into 38gmx2 (large) and 25gmx5 (small) balls...adjust to the final weight of the dough..
For bamboo charcoal dough, divide into 36gmx2 (large) and 23gmx5 (small) balls... adjust to the final weight of the dough...
For plain dough, divide into 55gmx2 (large) and 40gmx5 (small) balls... adjust to the final weight of the dough..
Cover with towel to prevent drying out the dough..
Using a rolling pin, flatten cocoa dough then roll into oval shape. Shape it like rolling a swiss roll then roll in the pan length. Do the same for all the cocoa dough.. set aside..
Using a rolling pin, flatten bamboo charcoal dough then roll into oval shape big enough to cover the cocoa dough. Wrap it around cocoa dough, leaving some edges seal and some not...do the same for all the bamboo charcoal dough... set aside...
Using a rolling pin, flatten the plain dough and roll into oval shape big enough to cover the mix dough and seal all edges...
Roll the dough into double the length of the pan, then cut it into half.. do the same for all the dough..
In a lightly grease pan, randomly arrange the dough into the pan and let it rise until 90% full. Cover it then let it sit for 1hour before baking in 180c fan force oven for 30-35mins..
Once done, take it out from the pan and let it cool on a wire rack before slicing it...
And there you have it, leopard printed loaf...
