My 1st tray overbake bec was latching klaus didnt hear the timer went off..
2nd and 3rd tray ok.. just nice...
Dont have time to shape it nicely.. hahaha apa shape also got..
Here is the recipe:
250gm peanut
I toast it at 180c for 20mins..after grinding in food processor left 238gm
I toast it the night b4..
238gm ground peanut
238gm plain flour
100gm icing sugar
50gm castor sugar
1 large egg
150ml oil
Ratio is 1:1 ground peanut and flour..
Egg wash - 1 egg yolk + 1tsp water. Mix.
Do everything in a food processor..easy kan?
Add toasted peanut into food processor..grind it into fine crumbs (dont over else become peanut butter).
Then add the same amount of flour, pulse it to well mix.
Add icing sugar and castor sugar, pulse it to well mix.
Crack in 1 large egg, pulse to mix.. then drizzle the oil into the food processor while pulsing to get a nice wet crumbs..
The crumbs will hold together when you hold it in your palm.. if it is too wet add more flour.. if it is too dry add more oil...
Roll into 1tsp ball then, i use fondant tool to make a small round indentation on the dough. (The classic peanut cookies shape).
Egg wash the top and baked at 180c for 15mins.
I manage to yield 100pcs of cookies..
