Ginger & Spring Onions Chicken
Ingredients:
2 boneless chicken breast (cut into small pieces)
4~5 spring onions (cut into 2-inch lengths)
6~8 slices fresh ginger & 1 tsp minced ginger
3 tbsp cooking oil (1 tsbp for marinating chicken)
1/2 tbsp potato flour or cornstarch
2 tbsp oyster sauce
1/4 tsp sesame oil
1/2 tbsp chinese cooking wine
1/4 tsp sugar
3 dashes white pepper
Salt to taste
Method:
Marinate the chicken with potato flour and add 1 tbsp of oil. set a side for 10 min.
Heat up wok with cooking oil. add in the ginger and stir for a few seconds, then add the white part of the spring onions and stir a few times. Add in the chicken and continue to stir well. when the chicken starts to cook, add in the oyster sauce, sesame oil, chinese cooking wine, white pepper, sugar, and mix a few times. Add salt to taste, if it’s not salty enough. Add in the green part of the scallion, stir quickly and remove from heat.
