(Complete Recipe) Pineapple Tart

Recipe for the tart.

350gm unsalted butter
100gm condensed milk
2 extra large egg yolk
510gm plain flour

Egg wash - 1 egg yolk + 1tsp water

Mix butter and condensed milk on medium high for 3mins then add in egg yolk in low speed 1 by 1 till well combined. Add in half of the flour and on low speed mix it in.. scoop in the rest of the flour and mix well.

My pineapple jam ball is about 8gm (1/2tsp scoop) then my tart dough is about 9gm (i use weigh machine for this). Roll the dough into a ball then use thumb to pinch the center, put the pineapple jam ball into the center and wrap up the dough. Push thru a 2cm heart shape cookie cutter. U can use any design cookie cutter. Or make it into any shapes u like.

Egg wash the top and bake in preheated fan forced 160c oven for 15mins.

I managed to yield 124pcs.

I have rolled the store bought pineapple jam yesterday n earlier today. This store bought jam i like bec it is not sweet..
