Ayam Goreng Bacem
2 chicken whole legs
A
200 ml water
1 tbsp brown sugar
2 tbsp Sweet soya sauce
1/2 tbsp salt
White pepper to taste
1/2tsp tamarind water

1 bay leaf
1 pc lemongrass (white part only), bruised
3cm ginger, crushed
2cm galangal, crushed
2 cloves garlic, minced
7 shallots, minced
1 tsp coriander powder

Method:
Put 1tbsp of oil then sauté B.
Put 1tbsp of oil then sauté B.
Then add A.
After reach boiling point, add the chicken.
Cover the lid.
Cook till the water dries.
Prepare oil for deep frying.
Deep fry the chicken using medium low heat to prevent burning.
