Golden Pumpkin Prawns
300g medium size prawns
150g pumpkin, steamed and mashed
3 salted egg yolks, steamed and mashed
1cup oil for deep frying
2tbsp butter
1tbsp chopped garlic
Curry leaves (can omit)
Method:
1. Heat up oil for deep-frying, deep fry prawns till cooked (not over cooked). Dish and drain.

2. Melt butter in a wok and sauté curry leaves and chopped garlic till aromatic. Add mashed salted egg yolk, pumpkin and stir fry till fragrant.
3. Lastly add prawn and stir well. Dish up and serve.
