(Complete Recipe) Ancient Flavour Cheese Cake

Recipe for Ancient flavor cheese cake
(8 inches square pan)

Ingredients:
1) Fresh milk 100g, corn oil 100g, Parmesan cheese powder 20g, salt 0.2tbs
2) Low protein flour 124g
3) Egg yolk 124g
4) Egg white 280g, fine sugar 90g, baking powder 0.1tbsp, pinch of cream of tartar
5) Cheese slice 4.5 pcs
6) Parmesan cheese powder for dusting

Method:
1. mix ingredients (1) well, cook until 70c, add in ingredient (2) until combined.
Let it cold down and mix in ingredient (3) until smooth.

2. Whisk the egg whites and baking powder until frothy before adding the cream of tartar. Continue beating until fine foams before adding sugar gradually and beat till firm peaks.

3. Take 1/3 of the meringue and mix into the yolk batter, stirring with a hand whisk until combined. Add another 1/3 portion and mix until combined before adding the final 1/3 and then switch to spatula to scoop the batter from bottom and fold up on to the batter until no more yolk batter is visible.

4. Pour half of the meringue into the baking pan. Use scraper to smoothen the surface then line cheese slices on top. Pour in the remaining batter and use scraper to even out the top.

5. Sprinkle cheese powder on top.

6. bake with preheated oven using water bath method with160c for 60 min. (Temperature varies for different oven, adjust accordingly)
