Braised Threadfin
2cups oil for deep frying
300g yam, peeled and cut into pieces (can omit if you don't like yam)
700g Threadfin, cut into pieces, put salt
1/2tbsp chopped garlic
8slices ginger
Seasoning:
2tbsp light soya sauce
1tbsp oyster sauce
1/2tsp salt
1tsp sugar
600ml water (if no yam, reduce the water)
2 stalks spring onion, cut into short lengths

Method:
1. Heat up oil for deep frying, deep fry yam and fish separately till golden brown. Dish and drain.

2. Leave 1 tbsp oil in wok, sauté chopped garlic and sliced ginger till aromatic.
3. Add yam, fish, seasoning and bring to boil. Lower heat and simmer for 10min. Add spring onion and stir well. Dish up and serve.
