Nestum prawns
1 tbsp unsalted butter
2 chili padi chopped
Handful of curry leaves
2 egg yolk lightly beaten
4 tbsp of nestum
1 tbsp of sugar
1/2 tsp of salt
*if using salted butter have to reduce salt
1. Shallow pan fry the prawn to cook and set aside.
2. Add butter into a medium low heated pan and let it melt completely. Add salt.
3. Add in curry leaves and chili padi. Stir till fragrant.
4. Add in egg yolk while stirring the pan with a ladle vigorously to make egg string (dunno what to call it). Then turn heat to low and add in nestum and sugar. Stir to combine.
5. Add in prawns and coat it well.
6. Dish out and serve.
