Sambal Belacan
1 tomato
10red chili
12 chili padi
5 shallot
2 cloves garlic (I omit it and I love it)
1tsp salt
1tsp brown sugar
3tbsp oil
lime (I used kasturi)
Method:
1. Heat oil and sauté shallot, chili and tomato till fragrant.
2. Using a mortal and pestle (I use blender) grind everything.
3. Squeeze in the lime juice and stir to mix.

NB: if not consuming right away, store in the fridge. Squeeze in the lime juice just before serving.
