Beetroot Rice Recipe:
1/2 beetroot(finely grated & juice squeezed out)
1 bulb garlic
2 inch ginger
3 cups rice grain( wash & strained)
4 1/4 cup water
1 lime
1 tsp flat salt
3 tbsp Cooking Oil

Garnishing:
1/2 Indian red onion( sliced into half moons)
Fresh green chilly(cut into long strips)

Method:
1) Blend / pound ginger and garlic into paste.

2) Heat wok with oil & saute the ginger and garlic paste.
3) Add in grated beetroot & continue to saute till it is half cooked and the colour is pink.
4) Squeeze lime juice from 1 whole lime.(Cooking tip: lime juice functions to remove the muddy taste from the beetroot)
5) Add in strained rice grains and saute till it is evenly coated ...do not saute too long to prevent rice grain from breaking...less than a minute should be good enough....
6) Off stove...remove rice from wok and add into the rice cooker.
7) Add 4 1/4 cups of water and cook the rice in the rice cooker.
8) Once the rice is cooked...remove immediately from the cooker and transfer it to your serving bowl.(this prevents rice from drying up in the cooker)
9) Garnish with half moon onions and fresh green chillies.
10) Beetroot rice works well with any dish and is very healthy. Its a great way to get kids to eat it by serving it in rice meals...
