(Complete Recipe) Cheddar Cheese Cotton Cake

Recipe is belong to my shifu and I just modified a little bit.

Ingredients:
4 slices Cheddar Cheese (tear into pieces)
50g Corn Oil
100g Superfine Flour (sifted)
60g Fresh milk
5 yolks (B)
1 whole egg (B) whisk with a pinch of salt
5 Egg Whites (B)
90g-100g caster sugar (depend on the sweetness u want)
1/4tsp cream of tartar

Line base of 8 inch mold

Steam Bake Method: Pour in Hot Boiling Water into a big tray and place a rack in. Set at 170*C on TOP & BOTTOM together with FAN ON for Butterfly Conventional Oven. (Time and temperature adjust to own oven)

Method:
1. Slightly stir Egg Yolks & Whole Egg together.
Double boils Oil with cheddar cheese till melted. Remove from heat and add sifted flour. Mix well with a spatula till form dough.

2. Add in fresh milk to beaten egg yolks and stir. Add flour dough directly into the egg yolks mixture and fold till well combined. (I sieve it to get a very smooth cake). Set aside.

3. Whisk egg whites until frothy and add sugar by 3 batches on medium low speed. Beat well after every addition. Then increase to high speed and beat till firm peak.

4. Scoop 1/3 meringue to egg yolk batter and mix well. Fold in to the remaining meringue till well blended

5. Pour batter into prepare mold and gently knock out air bubbles.

6. Steam Bake at 170*C for 20 minutes on TOP & BOTTOM Heat with Fan off. Then reduce to 160*C and bake for 40 minutes. Off oven and leave in the oven for 10min. Open small gap for 5 minutes before taking out. Gently knock on table before setting to cool. No need to invert. Let fully cool before serving and no need to chill cold.
